We love a good acai bowl all year round, but it’s especially perfect now that it’s getting warmer in LA! I made this nice treat for 2 – such a great way to relax and enter the week.
We also go crazy with toppings – they’re a great way to pack in benefits! As a mom I like to make sure the whole family is getting vitamins through food.
Recipe for 2:
Acai blend:
- 1 package of frozen acai (we use a 3.53 oz package of Sambazon blend)
- 1 frozen banana (sliced)
- 1 ½ cups of frozen blueberries
- 1 scoop of collagen powder (we like Vital Proteins)
- ¾ cup of Oatly or alternative milk
Toppings:
- Banana slices (potassium)
- Strawberry slices (vitamin c)
- Goji berries (antioxidants)
- Blueberries (vitamins c & k)
- Hemp seed (good fats omega 3 & 6)
- Bee pollen (complete proteins and b vitamins)
- Coconut meat slices (fiber and iron)
- Almond butter (protein and healthy fat)
- Coconut butter (protein and healthy fat)
- Cacao nibs (fiber, iron, manganese, antioxidants)
Blend the ingredients for the acai blend. I have a Vitamix and blend for 2 minutes at level 6. You might have to stop at intervals to push ingredients together and scrape down the sides. Try to blend for the minimal time so that you don’t end up with a runny blend. When it’s smooth and creamy, it’s ready!
I found 2 nice coconuts at Whole Foods. After cracking it open, we got the coconut water, coconut meat, and shells for serving. It was so nice to mix the acai and coconut at the end.
It was an ultimate way to end the weekend!
